Olive oil

Our olive oil is particularly mild and typical of coastal areas. One notes that the fairly precocious ripeness of the olives procures delicate aromas reminiscent of apple, hazelnut and cooked artichoke.
This olive oil develops a tender pungency ("ardence") along with a very light bitterness.
It is perfect sparingly drizzled on a white fish fillet for example.
